Humidity is kept at a very high level of between 90 – 95% RH, dependant on the product, to ensure that the product does not suffer from weight loss or deterioration in appearance. Fruit, vegetable and meats all benefit from correct storage which ensures that product sold by weight is kept at is a high level. Abattoirs are a prime example of preventing weight loss in a product sold by the kilogram. Humidity control also makes up for the moisture lost over low temperature cooling coils known as condensate.
